Perfect for the wake and bake crowd, check out this simple recipe for making your very own pot pancakes. This easy to make recipe will definitely have you starting your day off on the right foot! You will need some cannabutter from your preferred strain prepared for this one so you will have to plan ahead but otherwise making this breakfast treat is pretty much a walk in the park even for the most culinarily challenged cannabis enthusiast. If you are feeling it, you can make them even fancier by adding fruits like bananas and berries or some chocolate chips into the mix for a truly special meal you won’t soon forget.
3 1/3 tablespoons of cannabutter from your favorite cannabis strain
2 large eggs
1 1/2 cups of baking powder
1 1/2 cups of whole milk
1 1/2 cups of flour
1/2 tablespoon of vanilla extract
3 tablespoons of sugar
1/2 tablespoon of salt
Chocolate chips (optional)
Sliced bananas (optional)
2 mixing bowls
To start off you’ll want to prepare your wet and dry mixes using the two bowls. To make the dry mix, combine the 1 1/2 cups of flour, 1/2 tablespoon of salt, 1 1/2 cups of baking powder, along with 3 tablespoons of sugar and mix very well until all of the ingredients are even. In order to make the wet mix, take the second bowl and mix together 2 eggs, 1/2 tablespoon of vanilla extract, 1 and 1/2 cups of whole milk, and 3 1/3 tablespoons of your cannabutter, whisking them all together to ensure that they are even. Once the wet and dry mixes are finally ready, you can go ahead and consolidate the pair into a single bowl.
The mixture should be lumpy when you first combine them which is what you are looking for. If your batter ends up being excessively smooth, your pot pancakes may not have the usual fluffiness that your normal pancakes possess. At this point you can add your chocolate chips, bananas, or blueberries if you’d like your pot pancakes to be a little extra special. When your batter is set and ready to go, heat up your frying pan and cook these flapjacks popping each and every bubble that you see. Flip them once and cook until the tops of the cakes are a crisp golden brown color. Once your pot pancakes are done, grab some good old fashioned butter, tasty maple syrup, and enjoy! You’ll have enough batter to make a few stacks of pancakes to share with friends or save for a later time (though you will want to use what is left over within a few days to avoid having to toss it due to spoilage). Depending on the strain you’ve chosen to use you may need to clear your calendar for the rest of the morning but it will be totally worth it!
