Mac & cheese has been a staple of American comfort food for as long as one can remember and in the last few years has gained some additional popularity due to some of the creative ways that folks out there have enhanced this seemingly simple dish. Nowadays you can find baked, smoked, Wisconsin-style, lobster or any number of different variations of the classic mac & cheese recipe we all know and love. This particular recipe adds cannabis, four different cheeses, green peppers, bacon, and pepperoni into the mix for what are the makings of an exceptionally fun and tasty meal!
1 cup of grated cheddar cheese
1 cup of grated Mozzarella cheese
3/4th cup of grated Parmesan cheese
1 cup of grated Swiss cheese
1 pound of cooked macaroni pasta
4 slices of diced bacon
3/4 cup of diced pepperoni
1 cup of diced green peppers
½ cup of cannabutter
½ cup of unsalted butter
4 cups of milk
2 teaspoons of salt
1 teaspoon of black pepper
½ a teaspoon of cayenne pepper
1 tsp onion powder
2 tsp garlic powder
1 cup of flour
3/4th cup of bread crumbs
A deep pan
An oven dish/dutch oven
A frying pan
First, you’ll want to mix the regular butter and the cannabutter in the deep pan and heat until they are well melted or about 3-5 minutes. As soon as the butter is melted begin adding the flour a little at a time, making surer to whisk continuously as you do so. Next, being adding the milk slowly while whisking until it forms a smooth mixture. Once the smooth mix is formed you can add the salt, black pepper, onion powder, garlic powder, and cayenne pepper.
After the seasoning has been added, remove the mix from the heat and begin adding the mozzarella, cheddar, Swiss and Parmesan cheeses a little bit a time to ensure that they all mix in together nicely but do leave some of the Parmesan for the final step.
Next, place the diced bacon in the frying pan along with a dab of butter and cook over medium-high heat, stirring often. Once the bacon is fully cooked, you can add in the green peppers and pepperoni and continue to cook for about another three minutes and then remove from the heat. Once fully cooked, add the trio to your awaiting cheese sauce and mix them in well.
As your sauce is now ready, add in the cooked macaroni and mix them well using your spatula. Then, take the leftover Parmesan, some of the cannabutter, along with the bread crumbs, and sprinkle them on top of the mac and cheese. Lastly, move the mix into a greased oven dish or dutch oven and bake at 350 degrees Fahrenheit for around 30 to 40 minutes or until the crust has turned a deliciously golden brown. Once ready, remove from the oven and let sit for about 5-10 minutes so that you don’t get 3rd degree burns on your tongue and enjoy!
